This week for dinner, we had plans ALL day Sunday, so our time to cook was very limited. However, we refuse to skip a week so we went very simple! This takes, at the most, 20 minutes, and that's including prep time!
Serving Size: 4 Prep time: 3 minutes Total time: 20 minutes
Ingredients:
4 slices of Turkey
4 slices of Ham
4 large whole grain/spinach tortillas
12 eggs
Shredded Cheddar cheese OR fiesta mix
1 bag of frozen tater tots
4 bananas
12 strawberries
Blueberries
Instruction:
Preheat the oven to 425*F. Place wax paper on a pan, and dump the entire bag of tater tots onto the pan. Cook the tots for 18 minutes.
Tear up the slices of meat. The choice of meat is optional and can be subbed for your own personal preference. We did two slices of ham and turkey this round.
Crack 6 eggs over a large skillet and scramble. Add a handful of cheese before fully scrambled so that the cheese will be fully melted and mixed into the eggs.
Mix in the meat of your choice, then place the egg combo inside of your large tortilla.
Place the tortilla on the skillet to toast the outside of the tortilla, and flip after about 45 seconds to toast the other side.
Repeat steps 3-5 with your second meat option.
Slice up 4 bananas and 12 strawberries and place them in a bowl. Add your preferred amount of blueberries to the bowl, and mix them all together.
Sauces are optional, but Chalula and ketchup are great for the tater tots. Chalula, or your choice of hot sauce, and Chick-Fil-A sauce go great with the breakfast quesadilla.
You can add any garnishes to your quesadilla that you want, but it is not detrimental to the recipe. I love to add dill pickles!
